Chocolate Cake

Last week I attempted to make a chocolate cake. This recipe is gluten-free, refined-sugar-free and vegan. Enjoy!

Ingredients: 



275g gluten-free plain flour
100g cocoa powder
2 tsp bicarbonate of soda
1 tsp baking powder
450ml coconut milk
1 tsp lemon juice
320g brown sugar
300ml sunflower oil
2 tsp vanilla extract

For the buttercream:
175g dairy-free butter
200g icing sugar

For the ganache: 
200g dark chocolate
150ml coconut milk

Method:

1. Preheat the oven to 160° C (fan). Line a 9 inch cake tin. 
2. Mix the flour, cocoa, bicarbonate of soda and baking powder in a bowl. 
3. Add the coconut milk, lemon juice, brown sugar oil and vanilla extract to the bowl and then whisk to combine. 



4. Pour the mixture into the cake tin and bake for 35 minutes. 
5. While the cake is baking, make your ganache. Melt your chocolate (in the microwave), and then gradually add the coconut milk. 



6. Mix the dairy-free butter and icing sugar together to create your buttercream. 
7. When the cake has cooled (totally), coat it first in buttercream, and then with chocolate ganache. 
8. EAT





The verdict: 

Was it easy? 

This was the most complicated recipe I've tried so far, and frankly, I got chocolate everywhere. On the floor, in my hair, on the sofa. Literally everywhere. So, was it easy? No. Was it worth it? Definitely. 

Did it taste good? 

Yep. Moist and squidgy and very, very chocolatey. My friends enjoyed it, bit they only had a limited amount (because I had eaten the rest).  

Next time, I'll swap the sunflower oil for coconut oil.
