Brownies



For bake number two, I made brownies, because who does't love brownies?!

Ingredients: 


1 tbsp chia seeds
250g buckwheat flour
60g cacao powder
250g coconut sugar
2 tbsp agave syrup
1 tsp bicarbonate of soda 
120g coconut oil
100ml plant based milk (I used soya)

Method:

1. Preheat the oven to 175° C (fan). Line a rectangular baking tray. 
2. Mix the chia seeds with 4 tbsp of water and set to one side. 
3. Mix together all the dry ingredients (flour, cacao, sugar, bicarb) in a bowl, an check that there is no lumps. 

4. Add the milk, melted coconut oil, agave syrup and chia seed mixture. Mix well for about 5 minutes. 
5. Pour into lined baking tray and spread the mixture to the edges. 

6. Bake in the oven for 20 minutes. 


(yes, that's right, I burnt it a bit...)

7. Take it out of the oven and let it cool for 10 minutes - this is important. I didn't do this and my brownie cracked right down the middle when I tried to take it out of the tray!
8. Cut the brownies into bitesize piece. I made 15 altogether (after discarding the burnt bits...). 


9. EAT

The verdict: 

Was it easy? 

Totally. The hardest part was buying the ingredients, because who knows where they keep the chia seeds in Waitrose? I went to Holland and Barrett in the end. They've got all KINDS of weird and wonderful concoctions in there. 

Did it taste good? 

Yes! Chocolatey, chocolatey goodness, with a dense texture.

Fudgy, rich, did-i-mention-chocolatey-goodness.
